Ingredients
  

2 salmon fillets (about 6 oz each)

1 cup orzo pasta

3 cups low-sodium chicken or vegetable broth

1 lemon (zested and juiced)

2 cloves garlic, minced

1 small shallot, finely chopped

1 cup cherry tomatoes, halved

2 cups fresh spinach

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt, pepper, and half of the lemon zest. Place the salmon skin-side down in the skillet and cook for 4-5 minutes, until the skin is crispy. Flip the salmon and cook for an additional 2-3 minutes until the salmon is just cooked through. Remove the salmon from the skillet and set it aside.

    Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and chopped shallot, cooking for 1-2 minutes until they are fragrant and translucent.

      Cook the Orzo: Add the orzo to the skillet, stirring to coat it in the garlicky oil. Pour in the chicken or vegetable broth, and bring to a simmer. Stir in the lemon juice, dried oregano, salt, and pepper. Cook the orzo for about 10 minutes or until al dente, stirring occasionally.

        Add Tomatoes and Spinach: Once the orzo is nearly done, fold in the halved cherry tomatoes and fresh spinach. Cook for an additional 3-4 minutes until the spinach is wilted and the tomatoes are warmed through.

          Combine and Serve: Gently place the seared salmon back into the skillet, nestling it amongst the orzo. Sprinkle with the remaining lemon zest. Allow everything to heat together for a minute, then remove from heat.
