For the Grilled Chicken:

4 boneless, skinless chicken thighs

4 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

2 tablespoons olive oil

1 lime, juiced

Salt and pepper, to taste

For the Creamy Green Sauce:

1 cup fresh cilantro leaves

1 jalapeño, seeds removed (optional for spice)

3 garlic cloves

1 teaspoon lime juice

1/2 cup mayonnaise

1/2 cup Greek yogurt

Salt to taste

Marinate the Chicken: In a medium bowl, combine minced garlic, ground cumin, smoked paprika, olive oil, lime juice, salt, and pepper. Add the chicken thighs, ensuring they're well coated. Cover with plastic wrap and marinate in the fridge for at least 1 hour, preferably overnight.

    Prepare the Creamy Green Sauce: In a blender or food processor, combine cilantro, jalapeño, garlic, lime juice, mayonnaise, Greek yogurt, and salt. Blend until smooth and creamy. Adjust seasoning if necessary. Refrigerate until ready to serve.

      Preheat the Grill: Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

        Grill the Chicken: Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Once cooked, remove the chicken from the grill and let it rest for a few minutes. Slice the chicken and serve with the creamy green sauce drizzled on top or on the side.
