1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons butter

1 large onion, finely chopped

3 garlic cloves, minced

1-inch piece of ginger, grated

1 can (15 oz) tomato puree

1 cup heavy cream

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon turmeric

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan (for serving)

Instructions
 

In a large skillet, melt the butter over medium heat. Add the chopped onions and sauté until they turn golden brown, about 5-7 minutes.

    Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Add the chicken pieces to the skillet, seasoning with salt and pepper. Cook until the chicken is browned, around 5-7 minutes.

        Pour in the tomato puree and stir well. Add the garam masala, cumin, paprika, and turmeric, mixing until all the spices are well incorporated.

          Reduce the heat and simmer for 10 minutes. Then, gradually stir in the heavy cream and let the mixture simmer for another 5-10 minutes until it thickens and the chicken is cooked through.

            Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh chopped cilantro.

              Serve hot over basmati rice or with warm naan bread.
