Ingredients
  

1 ½ cups watermelon, pureed

½ cup almond milk (or any milk of your choice)

¼ cup chia seeds

1 tablespoon honey or maple syrup (adjust based on sweetness preference)

¼ teaspoon vanilla extract

Pinch of salt

Fresh mint leaves for garnish

Optional toppings: diced watermelon, sliced almonds, shredded coconut, or granola

Instructions
 

In a blender, combine the pureed watermelon, almond milk, honey/maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and well combined.

    In a medium-sized mixing bowl, add the chia seeds. Pour the watermelon mixture over the chia seeds and stir well to combine.

      Let it sit for about 10-15 minutes, then stir again to prevent clumping of the chia seeds.

        After the chia seeds have absorbed the liquid and the mixture has thickened, divide it equally into mason jars or serving glasses.

          Refrigerate for at least 2-3 hours, or overnight, to allow the pudding to set further.

            Just before serving, top each jar with diced watermelon, a sprinkle of sliced almonds, shredded coconut, or granola for added texture and flavor.

              Garnish with fresh mint leaves for a vibrant touch and extra freshness.
