Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 cup boneless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon mirin (Japanese sweet rice wine)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup carrot, diced

1/2 cup peas (fresh or frozen)

1/4 cup green onions, chopped

1 tablespoon teriyaki sauce

1 teaspoon grated ginger

Salt and pepper to taste

Optional: sesame seeds and additional green onions for garnish

Instructions
 

In a medium bowl, combine the chicken pieces with soy sauce, mirin, sesame oil, grated ginger, and a pinch of salt and pepper. Allow to marinate for at least 15 minutes.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through and slightly caramelized, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      In the same skillet, add a little more oil if necessary, and sauté the onion and garlic until fragrant and translucent, about 2-3 minutes.

        Add the diced carrot to the skillet and cook for another 2 minutes until they begin to soften.

          Stir in the peas and cooked rice, breaking apart any clumps. Mix well, and allow it to cook for about 2 minutes until heated through.

            Return the cooked chicken to the skillet, along with the teriyaki sauce and half of the chopped green onions. Stir to combine and heat for an additional minute.

              Taste the fried rice and adjust the seasoning with salt, pepper, or extra soy sauce, as desired.

                Remove from heat and serve hot, garnished with the remaining green onions and sesame seeds if using.
