Ingredients

2 cups shredded cooked chicken (rotisserie or grilled)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cooked brown rice or quinoa

1 cup diced tomatoes (fresh or canned)

1 cup shredded sharp cheddar cheese

1 cup guacamole (store-bought or homemade)

1 cup sour cream (or Greek yogurt)

4 large flour tortillas

1 tablespoon taco seasoning (optional)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for heat)

Instructions

Prep the Ingredients: Begin by gathering all your ingredients. If using leftover chicken, shred it into bite-sized pieces. If using corn or beans from a can, ensure they are rinsed and drained properly.

Layer the Burritos: On each tortilla, create layers starting with shredded chicken. Add black beans, corn, cooked rice or quinoa, diced tomatoes, and guacamole. Sprinkle with taco seasoning if desired, then top with a generous handful of shredded cheese. Finish with a dollop of sour cream.

Fold the Burritos: Fold in the edges of the tortilla over the filling. Starting from the bottom, roll it up tightly until it is fully enclosed. Repeat with the remaining tortillas and filling.

Grill the Burritos (Optional): For a crispy texture, preheat a skillet or grill over medium heat. Place the burritos seam-side down and grill for 3-4 minutes on each side until golden and crispy.

Serve: Slice the burritos in half diagonally and arrange them on a serving platter. Garnish with fresh cilantro and jalapeños if using. Serve with extra guacamole and sour cream on the side for dipping.
