1 lb (450g) smoked sausage, sliced into 1-inch pieces

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium zucchini, sliced

1 medium red onion, cut into wedges

1 cup cherry tomatoes, halved

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
