1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper (red or green), sliced into strips

1 large onion, sliced into rings

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon black pepper

2 tablespoons sesame oil

2 green onions, sliced (for garnish)

Instructions
 

Marinate the Steak: In a medium bowl, combine the sliced flank steak, soy sauce, oyster sauce, cornstarch, and black pepper. Mix well and allow to marinate for at least 20 minutes to tenderize.

    Prepare the Ingredients: While the steak is marinating, slice the bell pepper and onion, and mince the garlic and ginger. Set aside.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

        Cook the Steak: Add the marinated steak to the pan in a single layer (you may need to do this in batches). Sear for about 2-3 minutes without stirring, allowing it to get a nice brown crust. Flip and cook for another 1-2 minutes. Remove the steak from the skillet and set aside.

          Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions and bell peppers, stir-frying for about 3-5 minutes until they're tender-crisp. Add the minced garlic and grated ginger, and stir-fry for an additional minute until fragrant.

            Combine and Simmer: Return the cooked steak back to the skillet, mixing it with the sautéed vegetables. Drizzle sesame oil over the mixture, stirring well to combine, and let it cook for another 1-2 minutes for flavors to meld.
