Ingredients

2 ripe bananas

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon cinnamon

1/4 teaspoon salt

1 egg

1/4 cup milk (or a plant-based alternative)

1/2 teaspoon vanilla extract

Oil for frying (vegetable, canola, or coconut oil)

Powdered sugar for dusting (optional)

Maple syrup or honey (for serving, optional)

Instructions

Prepare the Bananas: In a mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for texture.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

Combine Ingredients: In the bowl with the mashed bananas, add the egg, milk, and vanilla extract. Mix well to combine.

Combine Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Skillet: Add about 1/4 inch of oil to a large skillet and heat over medium heat until hot (about 350°F or 175°C).

Cook the Fritters: Once the oil is hot, drop spoonfuls (about 2 tablespoons each) of the batter into the skillet, leaving space between each fritter. Fry for about 2-3 minutes on each side, or until golden brown. Adjust the heat if necessary to avoid burning.

Drain the Fritters: Once cooked, use a slotted spatula to transfer the fritters to a plate lined with paper towels to drain excess oil.

Serve: Dust the fritters with powdered sugar if desired, and serve warm with maple syrup or honey drizzled on top.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 4 (makes approximately 12 fritters)
