Slow Cooker Cowboy Casserole - An Organized Chaos

Whip up an irresistible and hearty Slow Cooker Cowboy Casserole that's perfect for busy weeknights! This delicious dish combines ground beef, black beans, corn, and zesty diced tomatoes, all layered with crispy tater tots and melted cheddar cheese. Simply brown the beef, mix in the ingredients, and let the slow cooker do the magic! Serve it hot, garnished with fresh cilantro and jalapeños for a kick. Ingredients
  

1 pound ground beef

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup beef broth

3 cups frozen tater tots

2 cups shredded cheddar cheese

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef with chopped onion and minced garlic until the beef is no longer pink. Drain excess fat.

    Transfer the cooked beef mixture to the slow cooker. Add in the black beans, corn, diced tomatoes with green chilies, taco seasoning, smoked paprika, beef broth, salt, and pepper. Stir well to combine.

      Layer the frozen tater tots evenly over the beef and bean mixture in the slow cooker.

        Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the tater tots are cooked through.

          About 15 minutes before serving, sprinkle shredded cheddar cheese over the tater tots. Cover and let the cheese melt.

            Once done, serve hot, garnished with fresh cilantro and sliced jalapeños if desired.
