1 lb ground beef (80/20 for flavor)

2 medium sweet potatoes, diced into 1/2-inch cubes

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 bell pepper (red or green), chopped

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for serving)

Prepare the Ingredients: Start by washing and peeling the sweet potatoes. Dice them into small cubes for even cooking. Chop the bell pepper, onion, and mince the garlic.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they are tender and slightly caramelized. Remove them from the skillet and set aside.

      Brown the Beef: In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the diced onion and bell pepper. Sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute.

        Add Ground Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it up with a spatula and season with chili powder, cumin, smoked paprika, salt, and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
