Ingredients
  

2 cups fresh pineapple, diced

2 jalapeño peppers, seeded and finely chopped (adjust based on spice preference)

1 small red onion, finely chopped

1/2 cup brown sugar

1/2 cup apple cider vinegar

1/2 teaspoon ground ginger

1/4 teaspoon ground cumin

1/4 teaspoon coriander powder

1/2 teaspoon salt

Juice of 1 lime

Fresh cilantro, for garnish (optional)

Instructions
 

In a medium saucepan, combine the diced pineapple, chopped jalapeños, and red onion. Stir well.

    Add the brown sugar, apple cider vinegar, ground ginger, cumin, coriander, and salt to the saucepan. Mix everything together thoroughly.

      Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent sticking.

        Once boiling, reduce the heat to low and simmer uncovered for about 30 minutes, stirring occasionally. The chutney should thicken and the flavors will meld beautifully.

          After simmering, remove the chutney from heat and stir in the lime juice.

            Allow the chutney to cool to room temperature. For the best flavor, refrigerate for at least 2 hours prior to serving.

              Garnish with fresh cilantro if desired before serving it as a condiment with grilled meats, seafood, or alongside cheese platters.
