Spinach and Feta Quesadillas (20 minutes)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

4 large flour tortillas

Salt and pepper to taste

Optional: salsa or sour cream for serving

Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until it wilts. Season with garlic powder, onion powder, salt, and pepper. Remove from heat and let it cool slightly.

    Prepare the Filling: In a mixing bowl, combine the sautéed spinach, crumbled feta cheese, and shredded mozzarella. Mix until well combined.

      Assemble Quesadillas: Lay one tortilla flat on a clean surface. Spoon a generous portion of the spinach and cheese mixture onto half of the tortilla. Fold the other half over to create a half-moon shape. Repeat this for the remaining tortillas.

        Cook Quesadillas: Wipe the skillet clean and return it to medium heat. Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown and the cheese is melted. You can cook them one at a time or in batches, depending on the size of your skillet.

          Serve: Once cooked, remove the quesadillas from the skillet and let them rest for a minute. Cut them into wedges and serve warm with your choice of salsa or sour cream.
