Ingredients

1 cup (2 sticks) unsalted butter, melted

1 cup light brown sugar, packed

½ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

Zest of 1 lemon

1 cup all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 cup fresh strawberries, hulled and diced

½ cup lemon juice (about 2 large lemons)

½ cup white chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

Mix Butter and Sugars: In a large mixing bowl, combine the melted butter, light brown sugar, and granulated sugar. Whisk together until well combined and smooth.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest until incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture into the wet mixture, stirring gently until just combined.

Incorporate Lemon Juice and Strawberries: Fold in the fresh lemon juice and diced strawberries carefully, ensuring they are evenly distributed throughout the batter. If using, fold in the white chocolate chips for extra sweetness.

Transfer to Pan: Pour the batter into the prepared baking pan and spread it evenly with a spatula.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the blondies to cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares and serve.
