Ingredients
  

2 large red onions, thinly sliced

2 tablespoons sumac

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, finely chopped, for garnish

Instructions
 

In a large mixing bowl, combine the sliced red onions and sprinkle them with salt. Gently massage the salt into the onions and let them sit for about 10 minutes to soften.

    In a separate bowl, whisk together the olive oil, balsamic vinegar, sumac, black pepper, and a little more salt, if desired.

      After 10 minutes, rinse the onions under cold water to remove excess salt and drain well.

        Toss the drained onions in the bowl with the dressing mixture, ensuring they are fully coated.

          Allow the onions to marinate for at least 30 minutes at room temperature for enhanced flavor, or refrigerate for up to 2 hours for a stronger infusion.

            Just before serving, garnish with finely chopped fresh parsley.
