Ingredients

2 large red onions, thinly sliced

2 tablespoons sumac powder

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey (or agave syrup for a vegan option)

Salt, to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Instructions

Prepare the Onions: Place the thinly sliced red onions in a bowl and sprinkle them with salt. Let them sit for 10 minutes to soften and release some of their natural juices.

Make the Dressing: In a separate small bowl, whisk together the sumac powder, olive oil, apple cider vinegar, and honey until well combined.

Combine: After the onions have rested, pour the sumac dressing over them. Toss gently to ensure all of the onion slices are well coated.

Marinate: Let the mixture sit for at least 30 minutes at room temperature, or for 1-2 hours in the refrigerator for a more intense flavor. This will help the flavors meld beautifully.

Serve: Once marinated, transfer the sumac onions to a serving dish, sprinkle with fresh parsley, and serve with lemon wedges on the side to squeeze over just before eating.

Enjoy: These sumac onions are a perfect tangy addition to grilled meats, salads, or as a stand-alone zesty side dish!
