Teriyaki Chicken Rice Bowl

2 cups cooked jasmine rice

1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces

1/4 cup soy sauce (or tamari for gluten-free)

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon rice vinegar

2 teaspoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water

2 tablespoons vegetable oil (for cooking)

1 cup broccoli florets

1 carrot, julienned

1/2 bell pepper, sliced thinly

2 green onions, chopped

Sesame seeds (for garnish)

Instructions
 

Make the Teriyaki Sauce: In a small bowl, whisk together the soy sauce, mirin, brown sugar, rice vinegar, and sesame oil. Set aside.

    Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.

      Stir-Fry the Vegetables: In the same skillet, add broccoli, carrot, and bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

        Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the teriyaki sauce over the chicken and vegetables, stirring to coat well.

          Thicken the Sauce: Pour the cornstarch mixture into the skillet and stir until the sauce thickens, about 1-2 minutes.

            Assemble the Bowl: Place a generous scoop of jasmine rice in each serving bowl. Top with the teriyaki chicken and vegetable mixture.

              Garnish: Sprinkle chopped green onions and sesame seeds on top for garnish before serving.
