Ingredients

For the Brownie Layer:

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup chocolate chips (semi-sweet or dark)

For the Cookie Layer:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips (semi-sweet or milk)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Brownie Layer:

      - In a medium bowl, combine the melted butter and granulated sugar. Mix until smooth.

        - Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

          - Sift in the cocoa powder, flour, salt, and baking powder. Mix until just combined. Stir in the chocolate chips. Set aside.

            Prepare the Cookie Layer:

              - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                - Beat in the egg and vanilla extract until well combined.

                  - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.

                    Assemble the Browkies:

                      - Spoon the brownie batter into the prepared pan and smooth it into an even layer.

                        - Gently drop spoonfuls of the cookie dough on top of the brownie layer, spreading it out as evenly as possible (it's okay if some brownie layer shows through).

                          Bake:

                            - Bake in the preheated oven for 25-30 minutes, or until the edges look set and a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).

                              Cool and Serve:

                                - Allow the browkies to cool in the pan on a wire rack for about 15-20 minutes. Use the parchment overhang to lift them out and cool completely on the rack before slicing into squares.

                                  Enjoy!

                                    - Serve warm or at room temperature. These are best enjoyed fresh but can be stored in an airtight container for up to a week.
