Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1 cup milk (whole or buttermilk for extra richness)

1 large egg

2 tbsp melted unsalted butter (plus extra for cooking)

1 tsp pure vanilla extract

1/2 cup chocolate chips (dark or semi-sweet)

Optional toppings: whipped cream, fresh berries, syrup, or powdered sugar

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the flour, cocoa powder, granulated sugar, baking powder, and salt. Whisk until well combined.

Prepare Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay. Fold in the chocolate chips.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.

Cook Pancakes: Pour 1/4 cup of batter into the skillet for each pancake. Cook for about 2-3 minutes until bubbles form on the surface and the edges look set. Flip and cook for an additional 1-2 minutes until the other side is cooked through.

Repeat: Continue the process with the remaining batter, adding more butter to the skillet as needed.

Serve: Stack the pancakes on a plate and serve warm with your choice of toppings like whipped cream, fresh berries, syrup, or a dusting of powdered sugar.
