Tuscan Chicken Pasta Recipe

Ingredients
  

2 boneless, skinless chicken breasts

8 oz penne pasta

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the halved cherry tomatoes and cook for 3-4 minutes, until they start to soften. Add the spinach and cook for another 2 minutes or until wilted.

        Make the Sauce: Pour the heavy cream into the skillet with the vegetables and stir well. Bring the mixture to a gentle simmer and let it cook for 2-3 minutes. Stir in the grated Parmesan cheese, mixing until it melts and combines into a creamy sauce. Season with additional salt and pepper to taste.

          Combine: Add the cooked penne pasta and sliced chicken to the skillet. Toss everything together gently to ensure the pasta and chicken are well coated in the creamy sauce.
