Ingredients

2 lbs ground beef (or a mix of beef and pork)

1 cup mashed potatoes (prepared and cooled)

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/2 cup finely chopped green onions (or chives)

1/2 cup breadcrumbs

2 large eggs

1/4 cup barbecue sauce (plus more for topping)

2 tablespoons Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

In a large mixing bowl, combine the ground beef, mashed potatoes, cheddar cheese, crumbled bacon, and green onions.

Add in the breadcrumbs, eggs, barbecue sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until all the ingredients are evenly incorporated, but avoid overmixing.

Transfer the meat mixture into the prepared loaf pan, pressing it down gently to shape it evenly.

Spread an additional layer of barbecue sauce on top of the meatloaf for a delicious glaze.

Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).

Once done, remove from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute for a moist meatloaf.

Garnish with freshly chopped parsley if desired and serve warm.
